Gluten Free - Muffins (Apple Cinnamon) Recipe

This recipe makes 12 servings.

Ingredients:

DRY INGREDIENTS

  • 1/3 cup sugar
  • 1 cup rice flour
  • 1 tsp baking powder
  • 3/4 tsp salt
  • 1/2 tsp soda bicarbonate

WET INGREDIENTS

  • 2 eggs
  • 3 tbsp canola oil

FLAVOURINGS

  • 1 apple, grated
  • 1 tsp cinnamon

Directions:

  • Mix the dry ingredients in a large mixing bowl.
  • Mix the wet ingredients in another bowl and quickly add to the dry ingredients.
  • Add in flavorings and stir very briefly.
  • Pour into greased non-stick medium size muffin cups and bake at180oC until golden and firm.
