Gluten Free - Chilled Watermelon Soup with Mint Recipe

This recipe makes 4 servings.

Ingredients:

  • 680g watermelon, cut into chunks
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped mint
  • 1 tablespoon of sugar
  • 90ml white wine
  • fresh root ginger, sliced
  • mint sprigs to garnish (optional)

Directions:

  • place all the ingredients except the ginger in a food processor
  • blend until smooth
  • transfer to a large bowl, add the ginger slices
  • cover and chill for at least 1 hours
  • remove the ginger slices and garnish with mint sprigs.
  • serve chilled
