This recipe makes 4 servings.
- 680g watermelon, cut into chunks
- 2 tablespoons lemon juice
- 2 tablespoons chopped mint
- 1 tablespoon of sugar
- 90ml white wine
- fresh root ginger, sliced
- mint sprigs to garnish (optional)
- Place all the ingredients except the ginger in a food processor.
- Blend until smooth.
- Transfer to a large bowl, add the ginger slices.
- Cover and chill for at least 1 hours.
- Remove the ginger slices and garnish with mint sprigs.
- Serve chilled.
