This recipe makes 12 servings.

Ingredients:

DRY INGREDIENTS

  • 1/3 cup sugar
  • 1 cup rice flour
  • 1 tsp baking powder
  • 3/4 tsp salt
  • 1/2 tsp soda bicarbonate

WET INGREDIENTS

  • 2 eggs
  • 3 tbsp canola oil

FLAVOURINGS

  • 1 apple, grated
  • 1 tsp cinnamon

Directions:

  1. Mix the dry ingredients in a large mixing bowl.
  2. Mix the wet ingredients in another bowl and quickly add to the dry ingredients.
  3. Add in flavorings and stir very briefly.
  4. Pour into greased non-stick medium size muffin cups and bake at 180°C until golden and firm.
