- 4 tablespoons of potato flour plus
- enough white rice flour to make it up to 300g
- 1 teaspoon bicarbonate of soda
- 1 teaspoon cream of tartar
- 1 teaspoon Xanthan Gum or Guar Gum
- Place all the ingredients in a large mixing bowl and mix until well blended.
- Store in an airtight container and re-mix well before using.
