Ingredients:

  • 3/4 cup mashed ripe banana
  • 1 egg
  • 1/2 cup brown sugar
  • 1/4 cup oil
  • 1/2 cup milk
  • 1/2 tsp vanilla essence
  • 1/2 cup potato starch
  • 1/2 cup cornstarch
  • 4 tsp baking powder
  • 3/4 tsp Xanthan gum
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground coriander (for better taste)

Directions:

  1. Preheat oven to 350°F.
  2. Mix together egg, brown sugar, oil, milk and vanilla in a large bowl.
  3. Add in potato starch, cornstarch, baking powder, Xanthan gum, baking soda, salt, and coriander and mix well.
  4. Pour the thin batter into greased 9” x 4” loaf pan.
  5. Bake for about 40 minutes, until tester inserted in middle comes out clean.
  6. Let it cool for a while before removing from pan. Cut into slices and keep covered.
  7. Refrigerate or freeze unfinished portion for freshness.
