Ingredients:

DRY INGREDIENTS

  • 2 cups rice flour
  • 1/2 cup potato starch
  • 1/2 cup tapioca flour
  • 1/3 cup cornstarch
  • 1 tbsp Xanthan gum
  • 1 1/2 tsp salt
  • 3 tbsp granulated sugar
  • 1 tbsp egg substitute
  • 1 tbsp active dry yeast

LIQUIDS

  • 4 egg whites
  • 4 tbsp canola oil
  • 1 tsp cider vinegar
  • 1 1/4 cups water

Directions:

  1. Preheat oven to 375°F.
  2. Coat a 9×5-inch loaf pan with some oil.
  3. Mix all dry ingredients in a large bowl. Add in liquids and beat for 2 minutes.
  4. Put dough into loaf pan and cover with plastic wrap and keep at warm place. Let it rise to the top of the pan.
  5. Bake 45 minutes until it turns lightly browned. Cool on a wire rack before slicing.

Large Bread Machine method:

  1. Follow the instruction given when put in ingredients into baking pan of bread machine and press start.
  2. Bread machine will help in mixing and kneading cycle. Use 1 rise and 1 knead cycle if machine is programmable.
  3. Remove upon completion of baking cycle.
