This recipe makes 4 servings.


  • 680g watermelon, cut into chunks
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped mint
  • 1 tablespoon of sugar
  • 90ml white wine
  • fresh root ginger, sliced
  • mint sprigs to garnish (optional)


  1. Place all the ingredients except the ginger in a food processor.
  2. Blend until smooth.
  3. Transfer to a large bowl, add the ginger slices.
  4. Cover and chill for at least 1 hours.
  5. Remove the ginger slices and garnish with mint sprigs.
  6. Serve chilled.
