This recipe makes 12 servings.
Ingredients:
DRY INGREDIENTS
- 1/3 cup sugar
- 1 cup rice flour
- 1 tsp baking powder
- 3/4 tsp salt
- 1/2 tsp soda bicarbonate
WET INGREDIENTS
- 2 eggs
- 3 tbsp canola oil
FLAVOURINGS
- 1 apple, grated
- 1 tsp cinnamon
Directions:
- Mix the dry ingredients in a large mixing bowl.
- Mix the wet ingredients in another bowl and quickly add to the dry ingredients.
- Add in flavorings and stir very briefly.
- Pour into greased non-stick medium size muffin cups and bake at 180°C until golden and firm.
