This recipe makes 4 servings. Takes about 30 minutes to make.
Ingredients:
- 10 cherry tomatoes or 2 tomatoes
- 2 zucchini cut into thick slices
- 2 capsicum, cut into small pieces
- 100g button mushrooms
- 4 skinned large boneless chicken breasts, cut into cubes
- ½ Lemon, juiced
- 1 tablespoon Olive Oil
- 2 tablespoons of chopped fresh coriander
Directions:
- preheat grill
- boil large pan of water
- add in capsicum, mushroom and zucchini
- blanch for 2 minutes
- drain well
- thread chicken cubes and vegetables alternately onto 4 skewers
- mix lemon juice with oil
- preheat grill
- cook kebabs for 12-15 minutes, basting with lemon juice mixture occasionally
sprinkle over the coriander and drizzle with olive oil before serving.
