Ingredients:
- 3/4 cup mashed ripe banana
- 1 egg
- 1/2 cup brown sugar
- 1/4 cup oil
- 1/2 cup milk
- 1/2 tsp vanilla essence
- 1/2 cup potato starch
- 1/2 cup cornstarch
- 4 tsp baking powder
- 3/4 tsp Xanthan gum
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 tsp ground coriander (for better taste)
Directions:
- Preheat oven to 350°F.
- Mix together egg, brown sugar, oil, milk and vanilla in a large bowl.
- Add in potato starch, cornstarch, baking powder, Xanthan gum, baking soda, salt, and coriander and mix well.
- Pour the thin batter into greased 9” x 4” loaf pan.
- Bake for about 40 minutes, until tester inserted in middle comes out clean.
- Let it cool for a while before removing from pan. Cut into slices and keep covered.
- Refrigerate or freeze unfinished portion for freshness.
